Mulloway is a native fish of Australia. They can be found in tidal lakes, estuaries, rivers, bays, and harbors of Southern Australia. Mulloway has similar culinary characteristics to the American Black Bass. Mulloway is particularly suited to sashimi and frying, roasting and stir frying in cooked preparations. The flavor in the summer is mild, rich and sweet, with a clean finish. In the winter it is rich, sweet and full flavored. |
